Yes, you can use fresh or canned (preservative-free) coconut water to make coconut water kefir. It is marvelous and soooo nutritious, especially fresh coconut has many beneficial enzymes. Coconut water is the same electrolyte balance as blood. And coconut water was used in WWII for IV infusions, even. It is ideal for GI distress also.
Just need a Mason jar, or any old two-pint jar with a lid. A few dates, 1/2 lemon, 1/2 cup sugar, non-chlorinated water to make water kefir. I'll bring instructions. It is easy though. Oh, a plastic strainer is helpful. I bought ours at Target.
