Some of you may be interested in obtaining "RAW" milk. There is an immaculate dairy farm in South Carolina which delivers incredibly delicious raw milk at the "Narrow Way Productions" parking lot in Fort Mill every other Wednesday at 3:00. It looks like they only sell whole milk. I only like to drink skim milk. Does anyone know if it is possible to separate it myself?I know how to make butter out of cream, but I don't know how to separate the two. I also don't know if raw milk is homogenized?

From what I've been reading, there are significant benefits (vitamins A&D, I believe) in animal fats. Raw milk is not homogenized. There are significant detriments to milk when it has been homogenized.
It is possible to separate off the cream from cow's milk. Goat's milk has much less fat though, so I'm not sure.
Basically, if you let whole milk sit, it separates and you can draw off the cream, or the milk, depending upon where you puncture the vessel. Or shake it and it mixes the cream into the milk, temporarily.

Raw milk is not "processed" in any way, hence, it is neither "homogenized," (fixes fats in the milk in an
emulsified state for better long distance transport) or "pasteurized," (heated to 161 degrees for 15 seconds or 200 for ultra-pasteurized to eliminate potential pathogens). Both processes change the molecular strucuture of milk and a number of vitamins/fats/enzymes inherent in milk in its natural state. If you would like to know all about it I highly recommend a book called, "The Untold Story of Milk," by Ron Schmid, ND. I got mine on Amazon. 'Sorry, I have no idea how you would make raw milk "skim" milk unless you just skim off the cream which would be fairly easy to do as it DOES seperate.
